National Apple Strudel Day falls on Thursday, June 17, 2027. That is 233 days away.
Apple strudel is a long roll of very thin pastry wrapped around sliced apples, sugar, cinnamon and often raisins. It comes out of the oven golden and flaky, usually with a dusting of powdered sugar on top.
The dough is the famous part. Traditional strudel dough is stretched by hand over a cloth-covered table until it is thin enough to see through, then brushed with melted butter. Bakers sprinkle toasted breadcrumbs under the filling so the apples' juice soaks into the crumbs instead of the pastry. The whole sheet is then rolled up using the cloth, which does most of the lifting.
Slices are often served warm, sometimes with vanilla sauce, whipped cream or a scoop of ice cream. Plenty of home bakers use store-bought phyllo instead of stretching their own dough, and the result is still layered and crisp. Bakeries and Central European cafes are the likeliest places to find a proper slice.
Tart, firm apples hold their shape best in the filling, so the slices stay distinct after baking rather than turning to sauce.
