National Blueberry Popover Day falls on Wednesday, March 10, 2027. That is 134 days away.
A popover is a light, hollow roll made from a thin batter of eggs, milk and flour. In a hot oven the batter puffs up and over the rim of its pan, which is where the name comes from. Add blueberries and you get a blueberry popover: crisp and golden outside, soft and custardy inside, with pockets of warm fruit.
The batter is closer to a pancake batter than a bread dough, and it needs no yeast. Steam does the lifting. That is why bakers are told not to open the oven door early, since a rush of cool air can make a rising popover sink.
Blueberries are a good match because they hold their shape and turn jammy as they bake. Some cooks drop a few berries into each cup after pouring the batter, so the fruit stays scattered instead of sinking to the bottom. A dusting of sugar or a little lemon zest is a common finish.
Popovers are best eaten within minutes of leaving the oven, while the outside still crackles. People tear them open and add butter, honey or a spoon of blueberry jam, and they show up most often at weekend breakfasts and brunch tables.
A dedicated popover pan has deep, narrow cups that push the batter upward, but a standard muffin tin works too. The popovers just come out a little shorter and wider.
