A little reason to celebrate

National Cake Day

Food ยท November 26

National Cake Day is about cake in all its forms, from plain pound cake to tall layered birthday cakes, and the simple pleasure of baking or sharing one.

National Cake Day

National Cake Day falls on Thursday, November 26, 2026. That is 30 days away.

Cake is one of the oldest ways people have found to make an ordinary afternoon feel like an occasion. At its simplest it is flour, sugar, eggs and fat, baked until it rises and sets into something soft enough to cut with a fork.

From there it branches in every direction. Pound cake is dense and buttery. Sponge cake gets its lift mostly from beaten eggs and stays light. Chiffon cake uses oil, which keeps it moist even after a day in the fridge. Then come the layered cakes, stacked with frosting between each round, and the sheet cakes cut into squares at office parties, where somebody always asks for a corner piece because it has the most frosting.

Marking the day is mostly a matter of eating cake on purpose rather than waiting for a birthday. Some people bake from a family recipe card stained with old butter. Others pick up a slice from a neighborhood bakery or try a style they have never had, like a carrot cake with cream cheese frosting or an upside-down cake with fruit caramelized on top.

One thing home bakers learn early is that a cake keeps baking for a few minutes after it leaves the oven. Letting it cool in the pan before turning it out helps it hold together, and frosting goes on far more smoothly once the cake is completely cool.
