A little reason to celebrate

National Dark Chocolate Day

Food ยท February 1

A day for dark chocolate, the deeper, less sweet side of chocolate made with a higher share of cocoa and little or no milk.

National Dark Chocolate Day

National Dark Chocolate Day falls on Monday, February 1, 2027. That is 97 days away.

Dark chocolate is chocolate with the volume turned up on cocoa. It is made from cocoa solids and cocoa butter with sugar, and usually without the milk that softens milk chocolate. The result is firmer, glossier and more bitter, with a snap when you break a square.

The flavor changes a lot from bar to bar. Some taste of coffee or toasted nuts, others lean toward dried fruit or red berries. Much of that comes from where the cocoa beans were grown and how they were fermented and roasted. Labels often list a cocoa percentage, and a higher number generally means less sugar and a stronger, drier taste.

Tasting it slowly helps. Let a piece sit on your tongue instead of chewing right away, and the flavor unfolds as it melts. People who do this seriously compare two or three bars side by side, the way others compare coffee.

It also cooks well. Dark chocolate goes into brownies, ganache, mousse and hot chocolate, and a little grated over a bowl of chili or a plate of strawberries works better than it sounds. Bakers tend to prefer it because its sharper flavor holds up against butter and sugar.

Store it somewhere cool and dry rather than in the fridge. A pale, dusty film on the surface is called bloom, and the chocolate underneath is still fine to eat.
