A little reason to celebrate

National Fried Clam Day

Food ยท July 3

Fried clams from mudflat to bun: how soft-shell clams are dug, shucked, coated in corn flour and piled into a toasted split-top roll.

National Fried Clam Day

National Fried Clam Day falls on Saturday, July 3, 2027. That is 249 days away.

Every fried clam starts in the mud. The soft-shell clam lives buried in tidal flats, and at low tide a small hole in the sand can give away where one is hiding. Diggers work with a short rake or fork, turning over the wet ground carefully, because the shell is thin and cracks easily.

The clam has a long siphon, often called the neck, that it cannot fully pull inside its shell. That is why these clams never quite close and why they get a soak in clean salt water before cooking, to help them spit out grit. Shucking means opening the shell, lifting out the meat and pulling the skin off the neck.

Then comes the coating, which decides most of the texture. A common approach is a quick dip in milk or evaporated milk, then a toss in corn flour, sometimes mixed with a little regular flour. The corn flour fries up light and slightly sandy in a pleasant way, clinging to every fold of the clam. The clams go into hot oil in small batches so the temperature stays up, and they come out when they are golden and cooked through.

The classic way to serve them is the clam roll. A split-top bun, the kind with flat sides, gets buttered and toasted on a griddle until both sides are crisp. The fried clams are heaped inside, usually more than the bun can reasonably hold, and a few always end up on the plate. Those are the cook's.
