National Fruit Compote Day falls on Monday, March 1, 2027. That is 125 days away.
Fruit compote is fruit cooked slowly in a little sugar and liquid until it softens and gives up its juice. The pieces usually keep some of their shape, which is what separates a compote from a jam. It is looser, quicker and meant to be eaten soon, not stored for months.
Almost any fruit works. Berries collapse into a glossy sauce in minutes. Apples and pears hold their edges longer. Dried fruit such as apricots, prunes and figs plump up as they simmer, and a cinnamon stick, a strip of lemon peel or a splash of vanilla can change the whole pot.
Most people meet compote as a topping. It goes on pancakes, waffles, yogurt, oatmeal, pound cake and cheesecake, and it turns plain vanilla ice cream into something that feels planned. Warm compote on a cold morning is a comfort. Chilled compote on a summer evening is close to dessert on its own.
It is also a kind way to treat fruit that is past its best. Soft peaches, bruised plums and the last handful of berries in the carton all cook down well, and a little extra sugar covers for fruit that never quite ripened.
A spoonful of the syrup left at the bottom of the pan is good stirred into sparkling water.
