A little reason to celebrate
Gingerbread House Day
Food · Hobby · December 12
A day for building and decorating gingerbread houses, from sturdy walls and icing glue to candy roofs, gumdrop paths and snowy sugar yards.
Gingerbread House Day falls on Saturday, December 12, 2026. That is 46 days away.
A gingerbread house is a small building made of baked spiced cookie, held together with icing and covered in candy. It is part baking project, part architecture, and part test of patience while the walls set.
The dough for houses is usually rolled firmer and baked a little longer than the soft cookies people eat by the handful. That extra crispness keeps the walls from bowing. Many builders cut paper templates first, then trace them onto the rolled dough so the front, back, sides and roof pieces actually match.
Royal icing does the structural work. It is a thick mix of powdered sugar and egg white that dries hard, like edible mortar. For a version that is safe to taste, make it with meringue powder or pasteurized egg whites instead of raw egg whites. Spooned into a piping bag or a plastic bag with the corner snipped off, it lets you glue seams, pipe icicles along the eaves and draw window frames.
Decorating is where houses start to look like their makers. Some people shingle roofs with rows of cereal or sliced almonds. Others lay peppermint walkways, build pretzel fences or dust the whole yard with powdered sugar snow. Kits with prebaked pieces skip the baking entirely, which suits anyone who would rather spend the afternoon on trim.
If a wall keeps sliding, prop it with a can or a mug for twenty minutes or so. Icing that has had time to firm up holds far better than a steady hand ever will.
Ways to celebrate
- Try making royal icing with meringue powder and piping icicles along a roofline.
- Build a small house from graham crackers if baking walls feels like too much.
- Look for candy in your pantry to use as shingles, doors and fences.
- Share photos of your finished house with friends or family.
- Trade decorating ideas with a neighbor and swap leftover candy.
