National Maple Syrup Day falls on Thursday, December 17, 2026. That is 51 days away.
Maple syrup starts as sap, a thin and barely sweet liquid that runs inside maple trees. Producers collect it by tapping the trunk, then boil it for hours until most of the water is gone and what remains is thick, golden and unmistakably maple.
The process takes patience. A lot of sap goes into a little syrup, which explains the price tag on a small glass bottle. Sugar maples are the usual source, and the collecting happens in late winter and early spring, when cold nights and milder days get the sap moving.
The flavor changes with the batch. Lighter syrups taste delicate and almost buttery, while darker ones are deeper and a bit caramel-like, good for baking and cooking. Many people keep one of each and argue happily about which belongs on pancakes.
Pancakes and waffles are the obvious home for it, but maple syrup also turns up glazing carrots, sweetening oatmeal, brushed over salmon, or stirred into coffee. Some cooks swap it in for sugar in salad dressings, where it adds sweetness with a little warmth behind it.
Pure maple syrup and pancake syrup are not the same thing. The bottle labeled pure is just the boiled-down sap, while table syrups are usually corn syrup with maple flavoring, so the label is the place to look.
