A little reason to celebrate

National Raspberry Bombe Day

Food ยท August 11

A day for the raspberry bombe, a molded frozen dessert of ice cream or sorbet layers, often with a raspberry center, served in slices.

National Raspberry Bombe Day

National Raspberry Bombe Day falls on Wednesday, August 11, 2027. That is 288 days away.

A bombe is a frozen dessert shaped in a rounded mold, so it comes out looking like a smooth dome. The raspberry version leans on the berry for color and tartness, usually as a sorbet layer, a soft center, or both.

The idea is simple once you see it cut. An outer shell of ice cream or sorbet is pressed against the inside of a chilled bowl and frozen. Then the hollow is filled with something softer, often a light frozen mousse or a parfait mixture, and frozen again. When it is turned out and sliced, each wedge shows rings of color, like a geology diagram you are allowed to eat.

Raspberries suit the job well. Their sharpness cuts through cream, and their deep pink stays bright even when frozen. Some cooks pair the berry with vanilla or chocolate, and some finish the dome with whipped cream or a spoonful of raspberry sauce.

A home version does not need special equipment. A metal or glass mixing bowl lined with plastic wrap works as the mold, and store-bought sorbet and ice cream can be softened, layered and refrozen. Patience matters more than skill, since each layer has to set before the next goes in.

To serve, the bowl is dipped briefly in warm water so the bombe slides free. A knife warmed under the tap makes cleaner slices, and the first cut is always the moment everyone leans in to see the layers.
