A little reason to celebrate

National Sponge Cake Day

Food ยท August 23

A day for sponge cake, the light, airy cake raised mostly by beaten eggs and served plain, layered with cream, or soaked in syrup.

National Sponge Cake Day

National Sponge Cake Day falls on Monday, August 23, 2027. That is 300 days away.

Sponge cake gets its lift from eggs. Whole eggs or separated whites are beaten with sugar until pale and full of air, then flour is folded in gently so the bubbles survive. Many versions use little or no butter, which is part of why the crumb feels so springy.

The name fits. Press a slice and it bounces back, and it drinks up liquid without falling apart. That thirst explains a lot of its uses. Bakers brush it with syrup, stack it with whipped cream and fruit, or roll a thin sheet around jam. Trifle depends on it, and so do many strawberry shortcakes in American kitchens, where a soft sponge stands in for a biscuit.

On its own, a sponge is mild and lightly sweet, closer to a blank page than a finished story. A dusting of powdered sugar is enough for some people. Others want lemon curd, berries, or a cup of tea alongside.

The trickiest part of making one at home is the folding. Stir too hard and the air escapes, leaving a cake that is dense and a little rubbery. A wide spatula and a slow figure-eight motion keep the batter light, and most recipes say not to open the oven door early.
