A little reason to celebrate

National Truffle Day

Food ยท May 2

A day for chocolate truffles, the small rounds of ganache rolled in cocoa or coated in chocolate, named for their resemblance to a prized fungus.

National Truffle Day

National Truffle Day falls on Sunday, May 2, 2027. That is 187 days away.

A chocolate truffle is a small ball of ganache, which is chocolate melted together with cream. Once it sets, it is rolled into rounds and finished with a dusting of cocoa powder, a coat of tempered chocolate, or a roll in chopped nuts.

The name is borrowed. A cocoa-dusted truffle looks a bit like the knobbly, earthy fungus that grows underground and shares the word. The resemblance ends at the surface. One is dug from soil, the other is made in a kitchen with a spoon and a bowl.

The pleasure of a good truffle is in the texture. The outside gives way and the center melts slowly, soft rather than chewy. Flavors run from plain dark chocolate to versions with coffee, citrus zest, spices or a little salt worked into the ganache.

They are also one of the easier chocolates to make at home. Warm cream, pour it over chopped chocolate, stir until smooth, chill until firm, then scoop and roll. Cool hands help, since the ganache softens quickly. Keep the finished truffles in the refrigerator, because the cream makes them more perishable than solid chocolate, and let them sit out briefly before serving so the centers soften.

A plate of homemade truffles rarely looks perfectly round, and the cocoa hides most of the lumps.
