National Brisket Day falls on Friday, May 28, 2027. That is 213 days away.
Brisket is a cut of beef from the lower chest of the animal. It is a hardworking muscle, which makes it tough when cooked fast and tender when cooked slowly for many hours.
That patience is most of the story. Pitmasters smoke it low over wood until a dark bark forms on the outside and the slices bend without breaking. Home cooks often braise it in a covered pot with onions and broth, letting the oven do the slow part while the kitchen fills with a smell that makes everyone ask when dinner is.
The cut has two parts. The flat is leaner and slices neatly, while the point carries more fat and turns rich and soft. Barbecue fans tend to have opinions about which is better, and they will share them.
Brisket also shows up in places that have nothing to do with a smoker. Corned beef is usually brisket cured in brine, and pastrami starts from similar beef that is cured, seasoned and smoked. A sandwich counter and a barbecue joint can be serving the same cut in very different clothes.
Slicing matters more than people expect. Brisket is cut across the grain, so each bite has short fibers instead of long, chewy strands.
