A little reason to celebrate

National Ceviche Day

National Ceviche Day

National Ceviche Day falls on Monday, June 28, 2027. That is 244 days away.

Ceviche is raw seafood, usually fish or shrimp, marinated in lime or lemon juice with onion, chile and herbs. The acid firms the flesh and turns it opaque, so it looks cooked even though no heat is involved. It is served cold, often with tortilla chips, tostadas or crackers.

The flavor is bright and sharp. A good bowl tastes of lime first, then salt and heat, with the fish soft but not mushy. Versions vary a lot from place to place. Some add tomato and avocado, some add corn or sweet potato on the side, and some keep it to fish, citrus, onion and cilantro.

That cooked look is misleading. Citrus juice changes the texture of fish, but it does not kill parasites or bacteria the way heat does. Fish that was never frozen is actually the riskier choice for a raw dish. If you make ceviche at home, use fish that has been frozen for parasite control (sellers sometimes label it for raw use), keep everything cold, and eat it the same day. A restaurant that serves ceviche regularly is the easier route.

There is also a fully cooked path. Shrimp poached briefly, cooled and then tossed in lime juice gives much of the same brightness, and it is the version many home cooks prefer anyway.

The leftover marinade, milky and full of lime and chile, is sometimes served in a small glass on its own.
