National Fritters Day falls on Wednesday, December 2, 2026. That is 36 days away.
A fritter is a spoonful of batter with something tucked inside, dropped into hot oil and fried until golden. The filling can be almost anything that holds its shape. Apples, corn and zucchini are common, and so are clams and other seafood along the coasts.
The texture is the point. A good fritter is crisp and a little craggy outside, soft and steamy within, with the filling showing through in lumps. Sweet ones often get a dusting of powdered sugar or a thin glaze. Savory ones lean on a squeeze of lemon, a dipping sauce or plain salt.
Apple fritters at doughnut shops are probably the best known version in the United States, usually larger and more sprawling than the homemade kind. Corn fritters show up at summer cookouts and diners, and many families have a version built from whatever vegetables were left in the fridge.
At home, the oil temperature matters more than the recipe. Oil that is too cool makes fritters greasy, and oil that is too hot browns the outside before the middle cooks. Frying a test fritter first and breaking it open tells you a lot. Make sure the batter in the center is fully cooked, especially in fritters with seafood or meat. Small batches keep the oil hot, and a rack lets them drain without going soggy.
They are at their best within minutes of leaving the pan, which is why the cook usually eats the first one standing at the stove.
