A little reason to celebrate

National Hot Sauce Day

Food ยท January 22

A day for hot sauce, the chili-based condiment Americans shake onto eggs, tacos, wings and nearly everything else on the table.

National Hot Sauce Day

National Hot Sauce Day falls on Friday, January 22, 2027. That is 87 days away.

Hot sauce is, at its simplest, chili peppers turned into something pourable. Most bottles start with peppers, vinegar and salt, and from there the styles split in every direction.

Some sauces are thin and sharp, built mostly on vinegar, the kind that sits in a shaker bottle at a diner counter. Others are thick and fruity, made with habaneros, mango or roasted garlic. Fermented sauces have a deeper, slightly sour taste, a bit like the difference between fresh cabbage and sauerkraut. Heat varies widely too. A few drops of one bottle might barely register, while the same amount of another can make you reconsider lunch.

The burn comes from capsaicin, a compound in chili peppers that triggers the same nerve receptors that sense heat. That is why water does little to help and why many people reach for milk, yogurt or bread instead.

Most people mark the occasion at the table. They try a new bottle, line up a few favorites for a side-by-side taste, or finally use the one that has been sitting in the back of the fridge door. Home cooks sometimes blend their own from fresh peppers, vinegar and salt. If you do, wear gloves when cutting hot peppers and keep your hands away from your eyes, because the oils linger on skin for a while.

A good bottle earns its place by what it does to plain food. Scrambled eggs, a bowl of beans and a slice of pizza all change with a few dashes.
