A little reason to celebrate

National Ice Cream Sandwich Day

Food ยท August 2

A day for the ice cream sandwich, the frozen treat of ice cream pressed between two soft chocolate wafers or cookies, eaten by hand.

National Ice Cream Sandwich Day

National Ice Cream Sandwich Day falls on Monday, August 2, 2027. That is 279 days away.

An ice cream sandwich is a slab of ice cream held between two layers of something baked. The classic American version uses vanilla ice cream and two thin, soft chocolate wafers, cut into a neat rectangle and wrapped in paper.

The wafers are the clever part. They soak up a little moisture from the ice cream and turn soft, so the whole thing bends slightly when you bite it, and your fingers get chocolate on them no matter what. Most people eat around the edges first. Some lick the ice cream at the sides before it escapes. Nobody has found a tidy method.

There are plenty of other shapes. Cookie sandwiches use chocolate chip, oatmeal or sugar cookies, often with the ice cream edges rolled in sprinkles or mini chips. Some shops press a scoop between two warm cookies to order. In other places a scoop goes inside a split brioche bun.

Making them at home is easy. Bake or buy a batch of flat cookies, let ice cream soften for a few minutes, press a scoop between two cookies, then freeze them on a tray until firm. Wrapped one by one in plastic or wax paper, they keep in the freezer for a while, which helps if you made too many.

The wrapper from a store-bought one usually ends up with a perfect chocolate print of the wafer on the inside.
