A little reason to celebrate

Pączki Day

Food · Seasonal · 47 days before Easter

Pączki Day is about pączki, the rich, filled Polish doughnuts that bakeries in Polish American neighborhoods sell by the boxful.

Pączki Day

Pączki Day falls on Tuesday, February 9, 2027. That is 105 days away.

A pączek is a Polish doughnut, and pączki is the plural. The name is usually said something like "POONCH-key," which surprises people who sound it out from the spelling. The dough is richer than an everyday doughnut, made with eggs, butter, sugar and sometimes a splash of spirits so it fries up without soaking in too much oil.

The result is round, heavy in the hand and soft inside. Most are filled. Traditional fillings include rose hip jam, plum butter and prune, while custard, raspberry and lemon show up just as often in American bakeries. The tops get a dusting of powdered sugar, a shiny glaze or a sprinkle of candied orange peel.

In places with deep Polish American roots, such as Hamtramck near Detroit and parts of Chicago, this is a busy day for bakeries. People line up early, buy by the dozen and carry boxes to the office, where they tend to disappear before lunch. Some families fry their own at home, which takes patience: the dough rises twice and needs a steady oil temperature to cook through without browning too fast.

If you find a bakery making them, ask what the fillings are before you order. A rose hip or prune pączek tastes closer to the old recipes, and it is often the one that sells out last, which says more about habit than flavor. A good pączek should feel a little dense, and the filling should reach the middle rather than hide near the edge.
