National Prime Rib Day falls on Tuesday, April 27, 2027. That is 182 days away.
Prime rib is a beef roast cut from the rib section, cooked whole and sliced at the table or in the kitchen into thick, rosy pieces. It usually comes with the bone still attached, which helps the meat hold its shape in the oven.
The appeal is mostly patience. A rib roast is seasoned simply, often with salt, pepper and garlic, then roasted slowly so the center stays pink while the outside forms a dark, savory crust. The fat marbled through the meat melts as it cooks, which is why the slices are so tender. After it comes out of the oven, the roast rests before carving so the juices settle back in.
On the plate, prime rib tends to arrive with au jus, the thin sauce made from the pan drippings, and a spoonful of sharp horseradish cream. Baked potatoes, Yorkshire pudding and a green vegetable are common companions. Steakhouses and supper clubs have long kept it on the menu, sometimes only on certain nights, because a whole roast is a commitment.
At home, people mark the day by roasting a smaller two or three rib piece, or by ordering it out and arguing pleasantly about how pink the middle should be. Leftovers make a very good sandwich the next day, sliced thin on a soft roll with a little of the reserved jus for dipping.
