A cappuccino is a small coffee drink built in layers. It starts with a shot of espresso, adds steamed milk, and finishes with a deep layer of milk foam on top.

That foam is what sets it apart. Compared with a latte, a cappuccino has less milk and more foam, so the espresso flavor comes through stronger and the texture feels light and airy. A good one sits in a modest cup, often around six ounces, and the foam holds its shape for a while before settling. Some cafes dust the top with cocoa or cinnamon. Others pour the milk so the foam forms a simple pattern, like a heart or a leaf.

In Italy, the cappuccino is traditionally a morning drink, and plenty of people there would not order one after lunch. In American cafes the rules are looser, and you will see cappuccinos at any hour, sometimes in sizes an Italian barista might squint at.

Making one at home takes a little practice. A steam wand on an espresso machine gives the most cafe-like foam, but a handheld frother or a jar shaken with warm milk can get you close. Whole milk foams richly, and many plant milks made for baristas foam well too.

The name is usually traced to the Capuchin friars, whose brown hooded robes resemble the color of espresso mixed with milk.
