National Chocolate Mousse Day

Food ยท April 3

Chocolate mousse, the airy dessert of chocolate lightened with whipped cream or eggs, and the easy ways to make or share a bowl of it.

National Chocolate Mousse Day

National Chocolate Mousse Day falls on Saturday, April 3, 2027. That is 158 days away.

Chocolate mousse is chocolate that has been talked into being light. Melted chocolate is folded together with whipped cream, beaten eggs, or both, and the trapped air turns something dense into a soft, spoonable cloud. The word mousse is French for foam, which is a fair description of the texture.

A good mousse sits somewhere between pudding and whipped cream. It holds its shape on a spoon but melts almost at once. Dark chocolate gives it a deep, slightly bitter edge, while milk chocolate makes it sweeter and gentler. It is usually chilled for a few hours so it can set, then served in small glasses or cups, sometimes with a spoonful of cream or a few berries on top.

The classic method folds in raw egg whites, and raw eggs can carry Salmonella. Home cooks have easy ways around that. Pasteurized eggs, sold in many grocery stores, work just like regular ones. Some recipes gently cook the yolks with sugar into a custard base before the chocolate goes in. Simplest of all is a mousse made only with chocolate and whipped cream, which needs no eggs at all.

Folding is the part that takes patience. Stirring hard knocks out the air, so the lighter mixture goes in a little at a time, turned over with a spatula until no streaks remain. Rushing it gives you a perfectly good chocolate cream that is merely not mousse.

Servings are traditionally small, and that is not stinginess. A few spoonfuls of something this rich go a long way.
