Coffee cake usually has no coffee in it. The name describes the company it keeps. It is a soft, lightly sweet cake meant to be eaten with a morning cup, often in a square cut from a pan and still a little warm.
The classic American version has a buttery batter, a ribbon of cinnamon sugar through the middle, and a thick streusel on top made from flour, butter and sugar rubbed together into crumbs.
