Cookie dough gets its own day: the soft, sweet stage before the oven, plus how to enjoy it safely by spoon or baked into cookies.

National Cookie Dough Day falls on Monday, June 21, 2027. That is 237 days away.
Cookie dough is butter, sugar, flour and usually eggs, stirred together until it holds its shape. Add chocolate chips, oats or nuts and it becomes the start of almost any drop cookie. This day gives the unbaked stage some attention.
The pull of it is easy to understand. Dough is soft, cool and sweeter-tasting than the finished cookie, and the chips stay firm instead of melting. Plenty of people grew up hovering near the mixing bowl.
Ordinary dough, though, is meant for the oven. Raw eggs and raw flour can both carry bacteria, so the bowl and beaters from a regular batch belong in the sink, not in anyone's mouth, kids included. Baking takes care of the problem.
For dough you can eat with a spoon, the recipe changes. Leave out the eggs and use flour that has been heat-treated, either bought that way or toasted in the oven until it reaches a safe temperature and then cooled. A splash of milk keeps the texture soft. Many grocery stores also sell dough labeled as safe to eat raw, which skips the extra step.
The rest is up to the baker. Some people scoop a few balls onto a tray and freeze the rest for later batches. Others stir edible dough into ice cream or roll it into small bites. Frozen balls of regular dough can go straight into the oven, needing only a minute or two more than fresh.
