National Crown Roast of Pork Day falls on Sunday, March 7, 2027. That is 131 days away.
A crown roast of pork is a pork rib roast bent into a circle and tied, with the rib bones pointing upward. From above it looks like a crown, and the hollow middle is often filled with stuffing.
The cut comes from the loin, the same part of the pig that gives pork chops. A butcher usually trims the meat away from the tips of the bones, a step called frenching, so the bones look clean and tidy. Two racks are often joined to make a full ring.
It roasts slowly in the oven and is carved at the table by slicing between the bones, so each person gets something close to a thick chop. Some cooks cover the bone tips with foil so they do not darken too much, and a few top them with little paper caps for a dinner that wants to look formal. It is the rare roast that arrives already dressed for the occasion.
Stuffings vary a lot. Bread stuffing with herbs is common, and apples, onions, sausage or wild rice all show up. Some people roast the crown empty and spoon the stuffing in at the end so the center cooks evenly.
Because it serves a crowd, a crown roast tends to appear at gatherings rather than weeknight dinners. Most butchers will tie one if asked ahead of time.
