National Flapjack Day falls on Sunday, March 7, 2027. That is 131 days away.
Flapjack is one of the older American names for a pancake. It is the same round griddle cake, made from a batter of flour, eggs, milk and a leavening such as baking powder, poured onto a hot surface and turned once.
The word has a pleasing sound to it, as if the cake is being flipped while you say it. In the US it tends to show up in diners, camp cookbooks and family kitchens where the recipe card has a few butter stains.
Cooking them is mostly a matter of patience. Bubbles rise and pop on the top side, the edges look dry, and that is the moment to flip. The first one off the griddle is often a little pale or lopsided, and many cooks treat it as the tester they eat standing up.
Toppings vary by household. Butter and maple syrup are the usual pair, but people also add blueberries, sliced bananas, chocolate chips or a spoonful of jam. Some folks prefer them thin and wide, others thick and fluffy, and plenty of breakfast tables have a quiet disagreement about which is right.
A stack keeps warm in a low oven on a plate, loosely covered, so everyone can sit down at once instead of eating in shifts.
