National Gingerbread Day falls on Saturday, June 5, 2027. That is 221 days away.
Before anyone rolled it thin, gingerbread was often a cake. A square pan, a dark crumb, a top that cracks a little as it cools. Many American cookbooks still use the word for exactly this: a soft, moist loaf or sheet cake warmed with ground ginger and sweetened in part with molasses.
The name stretches further than one recipe, though. Gingerbread is really a family. At one end sit the tender cakes, closer to a snack cake than a cookie. At the other end are firm, crisp biscuits sturdy enough to hang on a string. In between are sticky versions, pale honey versions and loaves studded with fruit. What ties them together is the warmth of ginger and a sweetness with some depth to it.
The cake form has its own habits. Molasses holds onto moisture, so a gingerbread cake tends to stay soft for days, and plenty of bakers swear it tastes better on day two, once the spice has settled in. It is usually served plain, cut into squares, or with something cool and soft on the side: whipped cream, a spoon of applesauce, a pour of lemon sauce.
Making one asks very little. Most recipes mix in a single bowl, need no special pan and forgive a few extra minutes in the oven. The smell alone does a lot of the work, filling a kitchen long before the timer goes off.
A warm square on a cold afternoon, eaten from a napkin, is about as old-fashioned as baking gets, in the best way.
