A little reason to celebrate

National Pastry Day

Food ยท December 9

A day for pastry in all its forms, from flaky croissants and fruit tarts to cream puffs, danishes and the humble hand pie.

National Pastry Day

National Pastry Day falls on Wednesday, December 9, 2026. That is 43 days away.

Pastry is a dough built mostly from flour, fat and water, and the fat does most of the work. How it is handled decides whether the result is flaky, crumbly, airy or crisp.

The family is large. Puff pastry is folded again and again around layers of butter, so it rises into thin sheets in the oven. Shortcrust is rubbed together quickly and stays tender, which is why it shows up under pies and tarts. Choux pastry is cooked on the stove before baking, then puffs up hollow and waits to be filled with cream. Phyllo is stretched so thin you can nearly read through it, then brushed with butter and stacked.

Most people mark the day the obvious way, by eating some. A bakery case offers a quick tour: a croissant for puff, a fruit tart for shortcrust, an eclair for choux. Savory pastry counts just as much, so a meat pie, a cheese twist or a spinach turnover belongs on the list too.

Baking pastry at home is less mysterious than it looks, though it does reward cold hands and patience. Butter that stays chilled keeps its layers separate, and those layers are what turn into flakes. A first attempt with store-bought puff pastry and some sliced fruit can still come out of the oven golden and crackling.

The best part of pastry may be the sound it makes when you cut into it.
