A little reason to celebrate

National Quesadilla Day

Food ยท September 25

A day for the quesadilla, the folded tortilla filled with melted cheese and whatever else you like, griddled until crisp.

National Quesadilla Day

National Quesadilla Day falls on Saturday, September 25, 2027. That is 333 days away.

A quesadilla starts with a tortilla, adds cheese, and folds or stacks the whole thing on a hot pan until the outside crisps and the inside melts. That is the entire core idea, and it holds up remarkably well.

The dish comes from Mexico, where it is often made with corn tortillas and a stretchy cheese such as Oaxaca. Fillings can be simple, like squash blossoms or mushrooms, or heartier, like chicken, beans or chorizo. In the United States, flour tortillas are common, and quesadillas show up everywhere from food trucks to school lunches to late-night kitchens where someone needed dinner in five minutes.

Technique matters more than it seems. Medium heat gives the cheese time to melt before the tortilla burns. A light press with a spatula helps everything stick together. Too much filling and the fold slides apart; too little and it is mostly a warm tortilla, which honestly is not a tragedy.

Most people mark the day the obvious way, by making one. Some try a new filling, some go back to the plain cheese version they grew up on, and some cut theirs into wedges for sharing with salsa, guacamole or sour cream on the side.

Leftover quesadillas reheat best in a dry skillet rather than a microwave, which brings back the crisp edges.
