National Taco Day falls on Monday, October 4, 2027. That is 342 days away.
A taco is a tortilla wrapped around a filling, eaten by hand. That is the whole idea, and it leaves a lot of room. The tortilla can be corn or flour, soft or fried crisp. The filling can be grilled beef, slow-cooked pork, chicken, fish, beans, potatoes or roasted vegetables.
Tacos come from Mexican cooking, where corn tortillas have been a staple for a very long time. Street tacos are often small, served on two stacked corn tortillas, and finished with chopped onion, cilantro and a squeeze of lime. In the United States you will also find the hard-shell taco filled with ground beef, lettuce and shredded cheese, along with fusion versions that borrow from Korean, barbecue or breakfast traditions.
Most people mark the day the easy way, by eating a few. Taco trucks, taquerias and family kitchens all count. A taco night at home works well for a group, since everyone can build their own and nobody has to agree on toppings.
Salsa does a lot of the work. A bright green salsa made with tomatillos tastes sharp and tangy, while a red salsa made with dried chiles tends to be smoky and deeper. Warming tortillas in a dry pan for a few seconds on each side makes them softer and less likely to crack when folded.
