National Vanilla Custard Day falls on Tuesday, August 17, 2027. That is 294 days away.
Vanilla custard starts with a short list: eggs, milk or cream, sugar and vanilla. Heat thickens the eggs, and the mixture turns from a thin liquid into something smooth and spoonable. That simple change is the whole trick, and cooks have been relying on it for a very long time.
There are two main families. Baked custard sets in the oven, often in small cups standing in a pan of hot water so the heat stays gentle. Stirred custard cooks on the stove and stays pourable, the kind spooned over cake or fruit. Frozen custard, a favorite at stands in parts of the Midwest, is closer to a dense, rich ice cream made with egg yolks.
Vanilla does most of the talking in all of them. A split vanilla bean leaves tiny black seeds through the custard, while extract gives a cleaner look and the same warm flavor. Either one works.
Custard is fussy in one way. Too much heat and the eggs scramble, leaving it grainy. Low heat, steady stirring and patience solve most problems. Because it is made with eggs, it should be cooked until it thickens fully (a thermometer reading of 160°F is the usual target), then cooled quickly and kept in the fridge.
A cold cup of custard with a little nutmeg on top is about as plain as dessert gets, and that is the point.
