National Whipped Cream Day falls on Tuesday, January 5, 2027. That is 70 days away.
Whipped cream starts as heavy cream, a liquid, and ends up as something you can pile into a cloud. Beating it traps tiny air bubbles, and the fat in the cream holds them in place. A little sugar and a drop of vanilla are the usual additions, though plain whipped cream has its fans.
Texture is most of the story. Stop early and you get soft peaks that slump gently over a slice of pie. Keep going and the peaks stand up straight, firm enough to pipe. Go too far and the cream turns grainy, then separates into butter and buttermilk, which is a lesson most home cooks learn exactly once.
Cold helps. Chilled cream whips faster and holds its shape better, and some people put the bowl and whisk in the refrigerator for a while first. A hand whisk works fine and gives you a decent arm workout. An electric mixer gets there in a few minutes.
The classic places for it are strawberries, pumpkin pie, hot cocoa, waffles and a bowl of berries. It also turns plain things into dessert: a spoonful on a cup of coffee, or on a square of gingerbread. Homemade whipped cream is best eaten soon after it is made and kept in the refrigerator, since it slowly loses air as it sits.
If you have leftover cream after whipping, it keeps well chilled for a short time, and a quick rewhisk brings back some of its lift.
